Meet The Chef
Chef
Brandy
She grew up with her nose hovering over her grandmother's pot, absorbing everything, the smells, the techniques, and the way a simple meal could make a whole room feel different. Her great-grandfather was a Greek immigrant who owned a bakery in Fort Worth, Indiana and during the Depression he kept it alive by hiring neighborhood women whose husbands were at war, paying them in bread and flour and sugar at the end of the day.
From him, her grandmother learned to cook Greek food, and incorporated that into her Kentucky hill country roots. The result was something entirely her own, a self-described Greek hillbilly kitchen that didn't fit neatly into any category but tasted like everything good about both.
That connection between food and feeling never left her. Early in her career, she ran the kitchen at a care facility where she'd track down residents' family recipes, a grandmother's pot roast, a wife's Sunday casserole, and cook them on a designated night of the week. The residents lived for it. So did she.
Food, to Brandy, has always been about more than what's on the plate. It's about invoking something.
A Shine On Ingredients
Flavor that speaks for itself
She's well traveled, having lived coast to coast: California, Hawaii, Oregon, Idaho, Savannah, and Virginia, and every stop left something behind. A technique, an ingredient, a flavor combination that stuck. When it came time to build The Cardinal's menu, she leaned into that.
“As the cardinal flies,” familiar dishes with Virginia roots and touches inspired by her culinary background and travels. Americana cooking that feels like home no matter where you're from.
Her craft sharpened fast. Working under the demanding mentorship of Chef Moni on the banquet team at The Main in downtown Norfolk, she was pushed to learn things the right way, no shortcuts. From there, she refined her skills as chef de cuisine at Saltine before landing at The Cardinal as executive chef, excited to leave her mark on something she can call her own.
Balance & Comfort
Tradition
With A Spin
The philosophy she brings to the kitchen is rooted in cross-utilization, nothing wasted, everything purposeful. She picks the ingredients she wants to showcase and finds every way to let them shine across the menu, keeping everything fresh, intentional, and moving. It's a mindset shaped by resourcefulness and refined by years of professional cooking.
Her food is simple: tradition with a spin. She's not trying to impress anyone with the name of a dish. She wants the flavor to speak for itself, balanced, comfortable, and just different enough to make you pay attention.
That's what's coming out of The Cardinal's kitchen.
How It Started
Virginia Beach didn't need another generic oceanfront restaurant. It needed a neighborhood spot, somewhere familiar. A place where locals and tourists could grab a great meal, catch some live music, and feel right at home.
So that's what we built.
The Cardinal started with a pretty simple idea: good food, a bar that calls you in, and a room with enough energy to make you want to stay awhile. Casual enough that you never feel out of place. Good enough that you keep coming back.
The team behind it knows the restaurant world well, through years in professional kitchens, a deep love of hospitality, and family roots in the business. They've done the jobs, learned the lessons, and put all of it into this place.
Building The Room
The vision was clear from the start: an inviting space with a Virginia Beach vibe. Casual and fun, with great food, a fully loaded bar, and consistent event schedule to keep the energy going year round.
But first, we had to rebuild the space with intention. Working alongside Virginia Beach based interior designers Lori Francis and Sally Reeve of Francis & Reeve, every detail was considered.
Warm colors and vibrant patterns grab your attention, balanced by light natural wood floors, slatted wood wall panels, and oversized cream pendant lights, which pull everything back to something coastal and familiar.
Setting The Tone
Bold &
Striking
A mural of a cardinal painted by renowned Virginia Beach artist Jeff Tarkenton anchors the interior, becoming the soul of the room and serving as a backdrop for our musical guests. The exterior lettering came from another local artist, Mickael Broth, aka The Night Owl, setting the tone for the comfortable feel you'll experience. Bordering the area around the mural are skateboard decks celebrating Virginia Beach’s skate culture and beloved The Cardinal Skate Shop, which called VB home for years.
Show Up, Stand Out
Make
Yourself
At Home
The name itself came the way everything else did: organically. The cardinal is Virginia's state bird. It’s bold, striking, and one of the few that stays put year-round. It doesn't migrate. It shows up, it stands out, and it makes itself at home. When Jeff's mural went up on the wall, that sealed the deal.
The music side came together fast. Buckshot, Wonderland, Woodwork, Radio 80s, Bachata Vida Latin Dance, Shag Night, weekly open mic nights, monthly mixology events, the room found its people, and Virginia Beach's Vibe District showed up and made it their own.
